It’s been cold again. Right before dinner time the girls get really antsy, being pent up in the house all day long. Baking is the perfect remedy. And baking a healthy cookie is not so guilt provoking as baking a full sugar, full fat cookie.

These were chocolate cookies, too, so they are even taste indulgent. MMMMM! Here’s the recipe:

6 Tablespoons Butter

1/8 cup applesauce

1 cup whole wheat flour

1/2 cup sugar

2 T honey

1 egg

3 T milk

1 t vanilla

1/8 t baking soda

1/3 cup unsweetened cocoa

1/4 cup natural peanut butter (I wish we had used crunchy, but we didn’t)


Mix first 9 ingredients in a KitchenAid, or use hand mixer, until completely blended. Add cocoa and peanut butter with a spoon until mixed in. Drop by rounded teaspoon onto ungreased cookie sheet and bake for 9 to 10 minutes in a 375 degree oven.

Cool on a wire rack and eat with abandon.
